Ownership, management and menu changes at Jack & Honey's
Jack & Honey’s in Thornton Park — the casual eatery that opened less than a year ago — already is undergoing a major executive-level shuffle.
The restaurant's co-owner Wendy Connor, General Manager Mike Goings and Chef Hannah Wicker have departed, leaving former co-owner Jason Lambert as sole owner. In addition, the eatery has brought in Lee Wolfcalf to manage the eatery, said staffer Eryn Modica, who was authorized to speak on behalf of the restaurant.
Connor and Wicker could not be reached for comment.
Goings said his July 25 termination came as a surprise. “We were told they can no longer pay our salaries if they want to stay open,” he told Orlando Business Journal.
Modica said the staff changes are due to creative differences. Jack & Honey’s now intends to nip some inconsistencies in the bud, and the menu and hours will change, she added. Jack & Honey's will open an hour earlier on Saturdays and Sundays — it already has begun to close an hour earlier during the week.
